Ok, it wasn’t quite vomit inducing, but it was close.
And it’s weird cuz, for the most part I assumed I was a decent cook. I can’t bake worth a damn, (sans that killer cheesecake I perfected ONCE and only once never to be repeated again) but I can follow the 💩out of a recipe.
So much so that when I was living in Omaha, Nebraska (oh I have STORIES bout Omaha) I was sneakily recruited into cooking an annual Friendsgiving Feast which upon word of mouth appeared to grow in size every year.
That’s neither here nor there because back when I was married (😑 I KNOW I always forget too), my ex was in the Air Force and money was tighter than a crab’s ass or President OBAMA’s fade. With money bein 🦀 tight, I had to find recipes that would stretch with inexpensive ingredients, and that’s when I came across this recipe for Mexican Chicken Stew. Apparently in other households it’s called Tortilla Soup. If you’re familiar, great. If not and you really want the recipe let me know by commenting below. Lawd, my kids fittin to be pissed because I made them each their own recipe books and pretty much cursed them to not share the recipes with anybody. Soooo maybe 🤔 I won’t. We’ll see. But that’s not the point of this blog. The Stew was SLAMMIN (yes, I’m Gen X and hood adjacent so I still say slammin, 🙄bite me).
The point of this blog is that Mexican Chicken Stew is a warm, conditionally spicy, hearty dish suitable for winters by the fire.
And I had all the ingredients in The New Jawn at the time, but the time is currently August.
As hungry as I was , I wasn’t fittin to be sweatin my 🍑off, so I thought to myself, “MiMi you got a box of macaroni, make a pasta salad with it”.

It most horrible slop I’ve ever made in my life and it goes out with the trash tomorrow.
